Recipe: Easy Creamy Spinach Dip♥

Ingredients: 1 package Fresh Spinach leaves, washed, dried and chopped 1 Cream cheese 255 grams, room temperature 5 cloves of garlic, minced 1/4 cup Extra Virgin Olive oil Grated Mozzarella cheese Salt and Pepper to taste Instructions: Pre heat oven at 350 degrees; In a food processor or blender : Blend together Cream Cheese, Spinach leaves, Garlic and Olive oil; Once the mixture becomes smooth and spreadable, add salt and pepper to taste (If you want a more gooey dip you can add additional Olive oil);  Transfer in a small baking dish;   Add Mozzarella cheese on top and bake for 10 minutes or until the cheese is melted;  Serve with sliced (toasted) French bread or baguette.   This dip is also great with chips! Recipe: Chocolate Chip Cookies (Stove baked :No Oven, No Problem & Oven baked)♥

Stove baked Choco chip cookies Oven baked Choco Chip Cookies  Ingredients: 1/2 cup softened butter 1-1/4 cups all purpose flour, sifted 1/2 tsp baking soda 1/2 cup white sugar 1/2 cup brown sugar 1 cup chocolate chips 1 egg 1/2 tsp salt 1/2 tsp vanilla extract   Procedure: In a bowl whisk the softened butter, white and brown sugar. Mix well make sure there are no lumps.  Then add egg and the sifted flour, baking soda and salt. Mix until well combined. Add the chocolate chips and the vanilla extract; Chill the dough in the freezer for 30 minutes; Scoop the dough with an ice cream scooper and place it on a greased pan or a parchment paper lined baking sheet/pan, leaving at least 4 inches space between cookies.  If you don't have an ice cream scooper you can use a spoon and make small balls with your hands. Recipe: Chicken Macaroni Salad

Happy Holidays!  Macaroni salad has been a staple dish in all of the occasions in our family. There are a lot of versions of this that came out but nothing beats the classic chicken mac salad I grew up making with my Lola Luming and Tita Linda since I was a kid. Been getting a lot of requests for the recipe, so here it is.  Ingredients: 450 grams Salad Macaroni pasta, cook as per package instruction  1/4 kilo Chicken breast, boiled and shred into small pieces  230 grams luncheon meat, diced (you can also use cooked ham)  165 grams Cheese, diced 1 medium size Carrot, diced  1 medium size White Onion, cut in small pieces  1 stalk Celery, cut into small pieces  200 grams pouch Pineapple tidbits (or small can), drain  2 tablespoons Relish pickles  2 pouches 470ml  Mayonnaise  Sugar, Salt & Pepper  Procedure: 1. I love breakfast!  Yes I do love preparing "almusal" (breakfast).  It's the first meal of the day.. so might as well have it because it's the source of energy - giving you a kickstart for the day.  Honestly, I don't really eat breakfast, I don't know why but it makes me sleepy.  But I love preparing it.  You can see it on the previous recipes I have shared.  (Mostly breakky lately).  Well, I can only do that on weekends, or sometimes if I don't have work.  Every time I cook or bake I wanted it to be special... so I really exert effort in making them.  Last week I made Baked eggs for my nephews... and it was really easy to make. Easy French Toast Recipe♥

This is one of the food requests of my nephew Lance,  he loves bread like me.  Last Saturday I don't have work so I decided to make his favorite - French Toast.  We both love French Baker's French toast so this is my version of it. Ingredients: 8 slices of Gardenia White Bread (any bread of white bread can do) 2 eggs, beaten 3/4 cups evaporated milk 1 tsp sugar 1/4 tsp vanilla extract  2 tbsp butter 2 tbsp cooking oil Cinnamon (optional) Light/Pancake syrup (optional)  Beat the eggs then add the milk, vanilla extract and sugar (you can add 1/4 tsp cinnamon powder).  Mix until the ingredients are incorporated. Pour some wet mixture on a plate and dip both sides of the white bread.  Make sure that both sides are coated evenly. Cook coated bread slices on cooking oil and butter on a non-stick frying pan on medium heat until brown. Tada! Gambas al Ajillo (Garlic Shrimps) Recipe♥

Two weeks ago I was craving for Dulcinea's Gambas...  As much as possible I don't really eat out because of the pandemic so I decided to make it.  And it's been a while since I shared something I cooked.  So here is my version of Gambas al Ajillo. Ingredients: 1/4 kilo Shrimps, medium or large shrimps approx 10 to 12 pcs  (peeled, deveined) 1 bulb of garlic (love it when there's more garlic) 1 pc. Siling Haba/Paningang (Long Chili), remove the seeds and chop in small pieces Olive oil approx 1/4 cup 1 tbsp. Butter (optional) Salt and pepper to taste Chopped parsley or spring onions (optional) for garnishing Heat the frying pan (medium heat) once hot put the olive oil then add the garlic.  Fry the garlic, once it's savory and turning a little brownish; Add the shrimps, when it's half way cooked; Add the chopped siling panigang (long Chili); Season with salt and pepper and add the butter.
